- In a large bowl, combine the flour, 1/2 cup sugar, butter, and salt until crumbly. Press the mixture evenly into the prepared pan.

- In another bowl, mix the chopped rhubarb, 1 1/2 cups sugar, eggs, cornstarch, and vanilla extract until fully combined.
- Pour the rhubarb filling evenly over the warm crust and return the pan to the oven. Bake for 20 minutes until the filling begins to set.
- While the filling bakes, beat the egg whites and cream of tartar until soft peaks form. Gradually add the remaining 1/2 cup sugar and continue beating until stiff glossy peaks develop.
- Spread the meringue evenly over the warm rhubarb filling, sealing the edges completely.
- Bake for an additional 10 to 12 minutes until the meringue is lightly golden.
