  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar for meringue


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, combine the flour, 1/2 cup sugar, butter, and salt until crumbly. Press the mixture evenly into the prepared pan.
  3. Bake the crust for 15 minutes or until lightly golden around the edges.
  4. In another bowl, mix the chopped rhubarb, 1 1/2 cups sugar, eggs, cornstarch, and vanilla extract until fully combined.
  5. Pour the rhubarb filling evenly over the warm crust and return the pan to the oven. Bake for 20 minutes until the filling begins to set.
  6. While the filling bakes, beat the egg whites and cream of tartar until soft peaks form. Gradually add the remaining 1/2 cup sugar and continue beating until stiff glossy peaks develop.
  7. Spread the meringue evenly over the warm rhubarb filling, sealing the edges completely.
  8. Bake for an additional 10 to 12 minutes until the meringue is lightly golden.
  9. Allow the Rhubarb Meringue Bars to cool completely before slicing and serving.
