  • 1 teaspoon garlic powder

  • 1 large romaine lettuce head, chopped
  • 2 cups red cabbage, thinly shredded
  • 1 cup carrots, shredded
  • 1 medium cucumber, diced
  • 1/4 medium red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 garlic clove, minced
  • 2 tablespoons extra virgin olive oil for the dressing
  • 1/4 teaspoon salt for the dressing
  • 1/4 teaspoon black pepper for the dressing


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Drain, rinse, and thoroughly dry the chickpeas with a clean kitchen towel or paper towels. Removing excess moisture helps them roast up crispy.
  3. Place the chickpeas on the prepared baking sheet and toss with 2 tablespoons olive oil, paprika, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  4. Spread the chickpeas into a single layer and roast for 25 to 30 minutes, shaking the pan halfway through, until golden and crunchy.
  5. While the chickpeas roast, prepare the salad base by combining the chopped romaine lettuce, shredded red cabbage, shredded carrots, diced cucumber, sliced red onion, and chopped parsley in a large bowl.
  6. In a small bowl or jar, whisk together the lemon juice, Dijon mustard, maple syrup, apple cider vinegar, minced garlic, 2 tablespoons olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until smooth and well combined.
  7. Let the roasted chickpeas cool for 5 minutes so they stay crisp when added to the salad.
  8. Add the roasted chickpeas to the salad bowl, drizzle with the dressing, and toss gently until evenly coated.
  9. Serve immediately for the best texture and crunch.
