Description

Roasted Garlic Mashed Potatoes are a creamy, vegan side dish made with roasted garlic, red potatoes, and plant-based milk. The combination of roasted garlic’s sweet, mild flavor and creamy potatoes creates a perfect comfort food that’s vegan and delicious.


Ingredients

  • 8 small-medium sized red potatoes (about 3.5 lbs or 8 cups) – provides a creamy texture
  • 1 head roasted garlic – adds a mild, sweet flavor
  • 2 tablespoons fresh chives, minced – enhances freshness and color
  • 1/2 teaspoon dried rosemary – adds an earthy, aromatic flavor
  • 1/3 cup vegan butter (Earth Balance or similar) – rich and creamy texture
  • 1 cup unsweetened almond milk (or any plant-based milk) – makes the potatoes creamy
  • 1 teaspoon salt (plus more to taste) – enhances all flavors
  • Fresh cracked black pepper – adds seasoning and a bit of spice


Instructions

  1. Scrub and peel the red potatoes, leaving some skin on for texture if desired. Cut them into 1-inch pieces.
  2. Place the potatoes in a large pot, add water to cover, and add 2 tablespoons of salt. Bring to a boil and then simmer for 20 minutes or until the potatoes are fork-tender.
  3. While the potatoes cook, roast the garlic. Cut the top off a bulb of garlic, drizzle with oil, wrap in foil, and roast at 400°F for 40 minutes.
  4. Drain the potatoes and transfer them to a mixing bowl. Mash the potatoes until they reach your desired consistency.
  5. Squeeze the roasted garlic cloves from their skins and mash them into the potatoes. For a smoother texture, mash the garlic into a puree before adding it to the potatoes.
  6. Add the chives, rosemary, vegan butter, non-dairy milk, salt, and pepper to the potatoes. Mix well until smooth and creamy.
  7. Taste and adjust the seasoning as needed. Garnish with extra chives and butter if desired. Serve immediately.

Notes

  • For chunkier mashed potatoes, mash less or leave some potato skins on.
  • For super smooth mashed potatoes, use an immersion blender to achieve a silky texture.
  • Leftover mashed potatoes can be stored in the fridge for up to 4 days. Reheat with a bit more milk for best results.
  • If you prefer a stronger garlic flavor, add more roasted garlic cloves.
