Description

Ingredients

  • 1 package (6 oz) stuffing mix
  • 3 cups cooked rotisserie chicken, shredded
  • 1 1/2 cups water or chicken broth
  • 1/4 cup (4 tbsp) butter
  • 3 stalks celery, diced
  • 1 medium onion, diced
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 can (5 oz) cream of mushroom soup
  • 8 oz (1 cup) sour cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Bring 1 1/2 cups water or chicken broth to a boil in a saucepan, then stir in the stuffing mix, remove from heat, cover, and let sit for 5 minutes before fluffing with a fork.
  3. In a skillet over medium heat, melt the butter and sauté the diced onion and celery for 5–7 minutes until softened.
  4. In a mixing bowl, combine the cream of chicken soup, cream of mushroom soup, and sour cream until smooth.
  5. Spread the shredded rotisserie chicken evenly in the prepared baking dish.
  6. Layer the sautéed onion and celery over the chicken and season with salt and pepper.
  7. Pour the soup mixture evenly over the chicken and vegetables.
  8. Top with the prepared stuffing, spreading it evenly across the dish.
  9. Bake for 60 minutes until the casserole is bubbly and the top is golden brown.
  10. Let rest for 5–10 minutes before serving.

Notes

  • Use chicken broth instead of water for a richer flavor.
  • Do not overpack the stuffing to keep it light and fluffy.
  • Add extra broth if you prefer a more moist casserole.
