Description

Sausage and Egg Breakfast Quesadillas are a delicious and filling breakfast option that is quick to make and can be easily customized. The combination of savory sausage, creamy scrambled eggs, and melted cheese wrapped in a crispy tortilla is perfect for busy mornings or meal prep. These quesadillas are also freezer-friendly, allowing you to enjoy a hot and satisfying breakfast any time of the day.


Ingredients

  • 8 oz. country sausage
  • 6 large eggs
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 6 oz. cheddar cheese, shredded
  • 6 medium flour tortillas


Instructions

  1. In a skillet, brown the country sausage over medium heat until crispy on the edges. Remove and set aside, leaving the grease in the skillet.
  2. Crack 6 eggs into a bowl and whisk together with salt and pepper.
  3. Shred the cheddar cheese.
  4. Add the whisked eggs to the skillet with the remaining sausage grease and cook, gently folding the eggs as they set. Cook until just set but still moist.
  5. Remove the skillet from heat and add the cooked sausage and shredded cheese to the eggs. Fold to combine.
  6. Place about 1/2 cup of the sausage, egg, and cheese mixture onto each tortilla, spreading it over half the tortilla. Fold the tortilla closed.
  7. Toast the filled tortillas in the skillet over medium heat until golden brown and crispy, and the cheese has melted inside.
  8. Slice the quesadillas into three pieces and serve.

Notes

  • For a spicier version, add sriracha or chili garlic sauce to the eggs.
  • These quesadillas can be frozen for up to 3 months. To reheat, cook over medium-low heat until golden and crispy.
  • For gluten-free options, use gluten-free tortillas.
  • You can add extras like bell peppers, spinach, or crumbled feta to the filling for added flavor.
