Description

Sausage and Egg Roll Ups are an easy, hearty breakfast made with fluffy scrambled eggs, savory breakfast sausage, melted cheddar cheese, and buttery crescent roll dough. These handheld breakfast roll ups are perfect for busy mornings, brunch, meal prep, or breakfast-for-dinner.


Ingredients

  • 4 large eggs, whisked
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8-ounce) package refrigerated crescent roll dough (8 triangles)
  • 4 slices cheddar cheese, cut in half (8 half-slices)
  • 8 fully cooked breakfast sausage links


Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Melt the butter in a medium skillet over medium heat. Add the whisked eggs and cook gently, stirring frequently, until softly scrambled. Season with the salt and black pepper.
  3. Separate the crescent roll dough into 8 triangles and arrange them on the prepared baking sheet.
  4. Place one half-slice of cheddar cheese on the wide end of each crescent triangle.
  5. Divide the scrambled eggs evenly among the dough triangles.
  6. Place one cooked breakfast sausage link on top of the eggs.
  7. Starting at the wide end, roll each crescent triangle tightly around the filling and place seam-side down on the baking sheet.
  8. Bake for 15 minutes, or until the crescent dough is puffed and golden brown.
  9. Allow the roll ups to cool for 3 to 5 minutes before serving warm.

Notes

  • Do not overcook the eggs before baking, as they will continue cooking in the oven.
  • Use fully cooked sausage links for best results.
  • Brush the tops with melted butter before baking for extra golden color.
  • Serve with maple syrup, salsa, or hot sauce for extra flavor.
