Description

  • 3 tbsp extra virgin olive oil
  • 2 tsp red wine vinegar
  • 2 cloves garlic, minced (about 2 tsp)
  • 1/2 tsp kosher salt
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp ground black pepper
  • 1/4 tsp red pepper flakes, plus more to taste
  • 2 tbsp fresh basil, thinly sliced (optional)
  • 2 tbsp fresh parsley, chopped (optional)
  • 2 tbsp grated Parmesan cheese (optional)


Instructions

  1. Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Arrange the sliced sausage, bell peppers, and onion on the prepared baking sheet.
  3. Drizzle the olive oil and red wine vinegar evenly over the ingredients.
  4. Sprinkle with garlic, salt, basil, oregano, black pepper, and red pepper flakes.
  5. Toss everything together until evenly coated, then spread into a single layer.
  6. Bake for 25 to 35 minutes, stirring once halfway through cooking.
  7. Continue roasting until the peppers are tender and the sausage is lightly browned.
  8. Remove from the oven and let rest for 2 to 3 minutes.
  9. Garnish with fresh basil, parsley, and Parmesan cheese if desired.
  10. Serve hot on its own, over rice, with pasta, or in toasted sandwich rolls.
