Description

  • 1 pound (450 g) Italian sausage, mild or spicy, casings removed if needed
  • 2 cups broccoli florets
  • 1 large red bell pepper, chopped
  • 2 medium carrots, sliced
  • 2 medium Yukon Gold potatoes, diced (about 2 cups)
  • 1 cup corn kernels (fresh or frozen)
  • 2 cups chopped kale (or baby spinach)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/3 cup freshly grated Parmesan cheese


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the Italian sausage and cook for 6–8 minutes, breaking it into small pieces until fully browned.
  3. Drain excess grease, leaving about 1 tablespoon in the skillet.
  4. Add the diced potatoes and cook for 6–8 minutes, stirring occasionally until they begin to soften.
  5. Stir in the broccoli, carrots, bell pepper, and corn. Cook for 5–7 minutes until the vegetables are tender-crisp.
  6. Add the minced garlic, oregano, basil, thyme, paprika, onion powder, garlic powder, salt, and black pepper. Stir well and cook for 1–2 minutes until fragrant.
  7. Add the chopped kale and cook for another 2–3 minutes until wilted.
  8. Taste and adjust seasoning if needed.
  9. Remove from the heat and sprinkle with freshly grated Parmesan cheese.
  10. Serve immediately while hot.

  • Use chicken or turkey sausage for a lighter version.
  • Frozen vegetables can be substituted for fresh vegetables to save prep time.
  • Cut vegetables into similar sizes for even cooking.
