These Sausage Egg and Cheese Breakfast Roll Ups are a quick and satisfying breakfast made with flaky crescent roll dough, fluffy scrambled eggs, savory sausage links, and melted cheddar cheese. - 1 can (8 oz) refrigerated crescent dinner rolls
- 8 fully cooked sausage links
- 4 slices cheddar cheese, halved
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it.
- Crack the eggs into a bowl and whisk until smooth. Reserve 2 tablespoons of the beaten eggs for brushing the tops later.
- Heat a skillet over medium heat and scramble the remaining eggs until just set. Remove from heat and let cool slightly.
- Open the crescent roll dough and separate it into 8 triangles on a clean work surface.
- Place half a slice of cheddar cheese on each crescent triangle.
- Add a spoonful of scrambled eggs over the cheese, then place one sausage link on top.
- Starting from the wide end, loosely roll each crescent triangle around the filling and place seam-side down on the prepared baking sheet.
- Brush the tops of the roll ups with the reserved beaten egg and sprinkle with salt and black pepper.
- Bake for 15 to 18 minutes, or until the crescent rolls are golden brown and the cheese is melted.
- Allow the breakfast roll ups to cool for 3 to 5 minutes before serving warm.
Notes
- Do not overcook the scrambled eggs before baking to keep the filling soft and fluffy.
- Turkey sausage or vegetarian sausage can be substituted for pork sausage.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
