Instructions
- Clean the mushrooms with a damp paper towel and slice them evenly.
- Heat the butter and olive oil in a large skillet over medium-high heat.
- Toss the mushrooms with the soy sauce just before adding them to the skillet.
- Arrange the mushrooms in a single layer and cook without stirring for 4 to 5 minutes until browned.
- Stir the mushrooms and continue cooking until they begin to soften.
- Add the white wine, if using, and cook until nearly evaporated while scraping any browned bits from the pan.
- Stir in the minced garlic and fresh thyme and cook for another 3 to 4 minutes until fragrant and the mushrooms are tender.
- Season with salt and black pepper to taste.
- Garnish with fresh chopped chives and serve immediately.

- Do not soak mushrooms in water; wipe them clean with a damp cloth instead.
