Description

Sautéed Zucchini with Garlic Butter is a quick and flavorful vegetable side dish made with fresh zucchini, garlic, butter, olive oil, Italian seasoning, and red pepper flakes.   • 2 cloves garlic, minced
  • 3 large zucchini, cut into rounds

  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Wash and dry the zucchini, trim the ends, and slice the zucchini into evenly sized rounds.
  2. Heat a large skillet over medium heat. Add the extra-virgin olive oil and unsalted butter and allow the butter to melt.
  3. Add the minced garlic and cook for about 30 seconds, stirring frequently, until fragrant. Do not allow the garlic to burn.
  4. Add the zucchini rounds to the skillet and season with Italian seasoning, kosher salt, freshly ground black pepper, and crushed red pepper flakes.
  5. Sauté the zucchini for about 7 minutes, turning occasionally, until the slices are tender with golden, lightly caramelized edges.
  6. Remove the skillet from the heat, garnish the Sautéed Zucchini with Garlic Butter with chopped fresh parsley, and serve warm.

Notes

  • Use unsalted butter so you can control the amount of salt in the recipe.
  • Garlic burns quickly, so cook it only until fragrant before adding the zucchini.
  • There is no need to peel zucchini because the skin is thin, tender, and edible.
  • Avoid overcrowding the skillet, as this can cause the zucchini to steam instead of brown.
