Description
These Shamrock Shake Cupcakes are a festive and fun dessert inspired by the classic St. Patrick’s Day mint milkshake. Featuring moist green peppermint cupcakes and topped with a light, whipped vanilla frosting, they’re perfect for parties, celebrations, or a themed treat any time of the year.
Ingredients
Scale
- 1 box (15.25 oz / 432 g) white cake mix: base of the cupcake, light and fluffy texture
- 3 large egg whites: adds structure while keeping the cake light in color
- 1 cup (237 ml) water: moistens the batter
- 1/3 cup (79 ml) vegetable oil: provides richness and keeps the cupcakes tender
- 1/4 to 1/2 teaspoon peppermint extract: gives the signature minty flavor
- 1/2 teaspoon green food coloring: gives the cupcakes their iconic green color
- 2 cups (474 ml) heavy whipping cream: used to create the fluffy frosting
- 4 tablespoons instant vanilla pudding mix: stabilizes and flavors the whipped cream frosting
- Green sprinkles (optional): decorative topping for festive appeal
- Maraschino cherries (optional): classic milkshake-inspired garnish
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large bowl, combine the white cake mix, egg whites, water, oil, and peppermint extract. Mix until the batter is smooth and lump-free.
- Add green food coloring and stir until evenly colored.
- Fill cupcake liners about 2/3 full with batter.
- Bake for 15–18 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely on a wire rack before frosting.
- In a clean mixing bowl, whip the heavy cream on high speed until it starts to thicken.
- Gradually add the vanilla pudding mix and continue beating until stiff peaks form.
- Frost cupcakes using a piping bag or spatula.
- Decorate with green sprinkles and top with a maraschino cherry, if desired. Serve immediately or chill until ready to serve.
Notes
- You can substitute mint extract for peppermint, but peppermint offers a cleaner flavor.
- Frosting is best made fresh; avoid over-whipping.
- Use a stand mixer for faster whipped cream preparation.
- Frost cupcakes just before serving to maintain the whipped texture.
- Store unfrosted cupcakes in an airtight container at room temperature for up to 1 day.
