- 2 lb russet potatoes, peeled
- 2 lb 90–95% lean ground beef
- 1 carrot, peeled and chopped
- 1 onion, chopped
- 1 cup frozen peas
- 1 large egg
- 5 garlic cloves, chopped and divided
- 2 lb zucchini
- 2 tsp Worcestershire sauce
- 1/2 cup grated Parmesan cheese, divided
- 3–4 tbsp whole milk
- 5 tbsp olive oil, divided
- 2 tbsp salt for the potato cooking water
- 1 tsp kosher salt, plus additional seasoning as needed
- 1/2 tsp ground black pepper, plus additional seasoning as needed
Instructions
- Preheat the oven to 450°F. Bring a large pot of water to a boil.
- Cut the peeled potatoes into approximately 1-inch pieces. Add 2 tablespoons of salt to the boiling water, then add the potatoes. Reduce to a simmer and cook for 10–15 minutes, or until a fork easily passes through the potatoes.
- Drain the potatoes thoroughly and transfer them to a large bowl. Add the milk, 1/4 cup Parmesan cheese, egg, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Mash until smooth and spreadable.
- While the potatoes cook, heat 2 tablespoons olive oil in a large frying pan over medium-high heat. Add the chopped carrot and onion and cook for 5–7 minutes, stirring frequently, until softened.
- Add half of the chopped garlic and cook for about 30 seconds, just until fragrant.
- Add the ground beef and cook for 6–7 minutes, breaking it apart and stirring frequently, until fully cooked and nicely browned.
- Stir in the Worcestershire sauce and frozen peas. Cook for another 2–3 minutes, then remove the filling from the heat.
- Spread the beef mixture evenly in an approximately 8-by-8-inch oven-safe casserole dish. Spoon the mashed potatoes over the filling and smooth them into an even layer.
- Sprinkle the remaining 1/4 cup Parmesan cheese over the potatoes. Bake in the center of the oven for 15–20 minutes, until hot and lightly golden.
- If additional browning is desired, place the casserole near the broiler for 3–5 minutes, watching carefully to prevent burning.
- Remove the shepherd’s pie from the oven and allow it to rest for about 10 minutes before serving.
- While the shepherd’s pie bakes, slice the zucchini into approximately 1/2-inch-thick rounds.
- Heat the remaining 3 tablespoons olive oil in a large frying pan over medium heat. Add the remaining garlic and cook for about 30 seconds.
- Add the zucchini and saute for 5–6 minutes, stirring frequently, until tender, cooked through, and lightly browned.
- Serve a portion of shepherd’s pie with sauteed zucchini on the side.
Notes
- Cut the potatoes into evenly sized pieces so they cook at the same rate.
- Drain the potatoes thoroughly before mashing to prevent a watery topping.
- Avoid overmixing the mashed potatoes, as excessive mixing can make them gummy.
- Allow the beef to brown well for deeper savory flavor before assembling the casserole.
