Description

  • 12 oz (340 g) medium shrimp, peeled and deveined
  • 8 oz (225 g) rotini or fusilli pasta
  • 1/2 cup (120 g) mayonnaise
  • 2 tbsp (30 ml) fresh lemon juice
  • 1 tbsp (15 g) Dijon mustard
  • 1/2 cup (75 g) celery, finely chopped
  • 1/4 cup (40 g) red onion, finely chopped
  • 2 tbsp (8 g) fresh dill or parsley, chopped
  • 2 cloves garlic, minced
  • 1 tbsp (15 ml) olive oil
  • 1/2 tsp (3 g) salt
  • 1/4 tsp (1 g) black pepper


Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water to cool completely.
  2. In a skillet over medium heat, cook the shrimp with olive oil for 2–3 minutes per side until pink and opaque. Remove and let cool.
  3. In a large bowl, whisk together mayonnaise, lemon juice, Dijon mustard, minced garlic, salt, and pepper until smooth.
  4. Add the cooled pasta to the dressing and toss to coat evenly.
  5. Add chopped celery, red onion, fresh herbs, and cooked shrimp to the bowl.
  6. Gently mix until all ingredients are well combined.
  7. Taste and adjust seasoning with additional salt, pepper, or lemon juice if needed.
  8. Cover and refrigerate for at least 30 minutes before serving for best flavor.
