- 8 oz (225 g) rotini or fusilli pasta
- 1/2 cup (120 g) mayonnaise
- 2 tbsp (30 ml) fresh lemon juice
- 1 tbsp (15 g) Dijon mustard
- 1/2 cup (75 g) celery, finely chopped
- 1/4 cup (40 g) red onion, finely chopped
- 2 tbsp (8 g) fresh dill or parsley, chopped
- 2 cloves garlic, minced
- 1 tbsp (15 ml) olive oil
- 1/2 tsp (3 g) salt
- 1/4 tsp (1 g) black pepper
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water to cool completely.
- In a skillet over medium heat, cook the shrimp with olive oil for 2–3 minutes per side until pink and opaque. Remove and let cool.
- In a large bowl, whisk together mayonnaise, lemon juice, Dijon mustard, minced garlic, salt, and pepper until smooth.
- Add the cooled pasta to the dressing and toss to coat evenly.
- Add chopped celery, red onion, fresh herbs, and cooked shrimp to the bowl.
- Gently mix until all ingredients are well combined.
- Taste and adjust seasoning with additional salt, pepper, or lemon juice if needed.
- Cover and refrigerate for at least 30 minutes before serving for best flavor.
