Description

This Slow Cooker Pot Roast is a classic comfort food recipe made with tender beef, hearty vegetables, savory seasonings, and rich homemade gravy. The slow cooking process creates melt-in-your-mouth meat with deep flavor, making it a perfect family dinner for busy weeknights, Sunday meals, or special gatherings.

Ingredients

Scale
  • 3 to 4 pounds chuck roast: well-marbled beef cut that becomes tender and flavorful during slow cooking
  • 1 teaspoon salt: enhances the natural flavors of the beef and vegetables
  • 1 teaspoon black pepper: adds mild spice and depth
  • 2 tablespoons olive oil: used for searing the roast and adding extra flavor
  • 1 large yellow onion, chopped: provides a sweet and savory base flavor
  • 4 cloves garlic, minced: adds rich aromatic flavor
  • 4 large carrots, cut into chunks: add sweetness, color, and texture
  • 2 pounds potatoes, cut into chunks: create a hearty side cooked with the roast
  • 2 cups beef broth: keeps the roast moist and creates the base for gravy
  • 2 tablespoons Worcestershire sauce: adds savory, umami flavor
  • 2 teaspoons fresh rosemary or 1 teaspoon dried rosemary: provides an earthy herbal aroma
  • 2 teaspoons fresh thyme or 1 teaspoon dried thyme: complements the beef flavor
  • 2 tablespoons cornstarch mixed with water (optional): thickens the cooking liquid into gravy

Instructions

  1. Prepare the vegetables by washing and cutting the potatoes, carrots, and onion into large pieces so they maintain their texture during slow cooking.
  2. Season the chuck roast generously with salt and black pepper on all sides. For deeper flavor, sear the roast in olive oil until browned before adding it to the slow cooker.
  3. Add the vegetables to the bottom of the slow cooker, then place the seasoned roast on top.
  4. Add garlic, Worcestershire sauce, rosemary, thyme, and beef broth around the roast.
  5. Cover and cook on low until the beef becomes fork-tender and easily pulls apart. Adjust cooking time based on the roast size and slow cooker temperature.
  6. Remove the roast and vegetables carefully once fully cooked. Allow the meat to rest briefly before slicing or shredding.
  7. If desired, transfer the cooking liquid to a saucepan and thicken with cornstarch slurry to create a rich gravy.
  8. Serve the tender roast with vegetables and gravy while warm.

Notes

  • Chuck roast is the preferred cut because its marbling creates tender, juicy results after slow cooking.
  • Avoid opening the slow cooker lid frequently because it releases heat and can increase cooking time.
  • For a gluten-free version, use gluten-free beef broth and a gluten-free thickener for the gravy.
  • Leftovers can be stored in an airtight container in the refrigerator for several days.
  • The flavors often improve the next day, making this recipe excellent for meal preparation.
