Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix the wet ingredients: In a large bowl, mash the bananas until smooth, then stir in the almond butter and vanilla extract until well combined.
  3. Incorporate the dry ingredients: Add the rolled oats and a pinch of salt to the mixture, stirring until evenly distributed. Gently fold in the chopped strawberries and chocolate chips if using.
  4. Shape the cookies: Scoop small portions of the dough using a spoon or cookie scoop and roll them into balls. Place them onto the lined baking sheet, leaving space between each. Flatten them slightly into cookie shapes with your hands or the back of a spoon.
  5. Bake the cookies: Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the edges are golden brown. Avoid overbaking to keep them soft and chewy.
