Ingredients

  • 12 tbsp (170g) unsalted butter, softened
  • 1 1/2 cups (300g) granulated sugar
  • 1 tbsp lemon zest
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 tsp lemon extract (or 1 tsp lemon + 1 tsp vanilla extract)
  • 3 cups (360g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • 3/4 tsp salt
  • 2 tbsp fresh lemon juice
  • 1/4 cup (50g) granulated sugar (for rolling)


Instructions

  1. Cream the softened butter, granulated sugar, and lemon zest together until light and fluffy (about 3–4 minutes).
  2. Add the egg, egg yolk, and lemon extract, then mix until fully combined.
  3. Add flour, baking soda, cornstarch, and salt. Pour lemon juice over the baking soda and mix gently until just combined. Do not overmix.
  4. Scoop dough into 1 1/2–2 tablespoon-sized balls and refrigerate for at least 1 hour.
  5. Preheat oven to 325°F (163°C) and line baking sheets with parchment paper.
  6. Roll chilled dough balls in granulated sugar to coat evenly.
  7. Place cookies on baking sheets, spacing them apart.
  8. Bake for 10–12 minutes until edges are set and centers look slightly underbaked.
  9. Optional: swirl a glass around warm cookies to shape them into perfect circles.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
