- 1 1/2 cups (300g) granulated sugar
- 1 tbsp lemon zest
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 2 tsp lemon extract (or 1 tsp lemon + 1 tsp vanilla extract)
- 3 cups (360g) all-purpose flour
- 1 tsp baking soda
- 1 tsp cornstarch
- 3/4 tsp salt
- 2 tbsp fresh lemon juice
- 1/4 cup (50g) granulated sugar (for rolling)
Instructions
- Cream the softened butter, granulated sugar, and lemon zest together until light and fluffy (about 3–4 minutes).
- Add the egg, egg yolk, and lemon extract, then mix until fully combined.
- Add flour, baking soda, cornstarch, and salt. Pour lemon juice over the baking soda and mix gently until just combined. Do not overmix.
- Scoop dough into 1 1/2–2 tablespoon-sized balls and refrigerate for at least 1 hour.
- Preheat oven to 325°F (163°C) and line baking sheets with parchment paper.
- Roll chilled dough balls in granulated sugar to coat evenly.
- Place cookies on baking sheets, spacing them apart.
- Bake for 10–12 minutes until edges are set and centers look slightly underbaked.
- Optional: swirl a glass around warm cookies to shape them into perfect circles.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
