Description

Soft Pumpkin Cookies with Espresso Frosting are tender, cake-like pumpkin cookies filled with warm fall spices and topped with a creamy espresso-flavored frosting. These bakery-style cookies are perfect for autumn gatherings, holiday desserts, coffee breaks, and anyone who loves pumpkin spice treats with a rich coffee twist.

Ingredients

Scale
  • 1 cup unsalted butter: provides richness and a tender cookie texture
  • 1 1/2 cups light brown sugar: adds sweetness and moisture with a caramel flavor
  • 1 cup pumpkin puree: creates a soft texture and rich pumpkin flavor
  • 1 large egg: helps bind the dough together
  • 2 teaspoons vanilla extract: enhances the overall flavor
  • 2 1/2 cups all-purpose flour: forms the structure of the cookies
  • 2 teaspoons pumpkin pie spice: adds classic warm fall flavors
  • 1 teaspoon ground cinnamon: boosts the aromatic spice profile
  • 1 teaspoon baking soda: helps the cookies rise and stay soft
  • 1/2 teaspoon kosher salt: balances sweetness and enhances flavor
  • 1 teaspoon instant espresso powder: adds a subtle coffee flavor
  • 4 cups confectioners’ sugar: creates a smooth and sweet frosting base
  • 1/4 cup unsalted butter: makes the espresso frosting creamy
  • 2 tablespoons instant espresso powder: gives the frosting its coffee flavor
  • 2 tablespoons water: dissolves espresso powder for the frosting
  • 1 teaspoon vanilla extract: adds sweetness and aroma to frosting

Instructions

  1. Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. Whisk together brown sugar, butter, pumpkin puree, egg, and vanilla extract until smooth and well combined.
  3. In a separate bowl, mix flour, pumpkin pie spice, cinnamon, baking soda, salt, and espresso powder.
  4. Gradually add the dry ingredients to the pumpkin mixture and stir until just combined. Avoid overmixing.
  5. Scoop the cookie dough onto prepared baking sheets, leaving space between each cookie.
  6. Bake until the edges are set and the centers remain soft, rotating the baking sheets halfway through baking.
  7. Allow cookies to cool completely on wire racks before adding frosting.
  8. Prepare the espresso frosting by beating butter until creamy, then gradually mixing in confectioners’ sugar, dissolved espresso powder, vanilla, and salt until smooth.
  9. Spread or pipe the espresso frosting over the cooled pumpkin cookies before serving.

Notes

  • Do not overbake the cookies to keep their soft, cake-like texture.
  • Use room-temperature ingredients for a smoother dough and better texture.
  • Measure flour carefully to prevent dry cookies.
  • Allow cookies to cool completely before frosting to prevent melting.
  • Store frosted cookies in an airtight container in the refrigerator for up to 2 days.
  • Cookies can be frozen without frosting and decorated after thawing.
