Description

The Southern Five Layer Beef Casserole is a comforting Southern dish that layers thinly sliced russet potatoes, savory browned beef, sweet onions, ripe tomatoes, and crisp green bell peppers, all seasoned perfectly for a hearty meal. Baked slowly, this casserole provides a fulfilling and flavorful experience that will become a family favorite.

Ingredients

Scale
  • 3 large russet potatoes, thinly sliced
  • 1 pound lean ground beef, browned and crumbled
  • 2 large onions, sliced into rings
  • 2 large tomatoes, sliced or 1 (15 oz) can diced tomatoes
  • 1 1/2 green bell peppers, chopped
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • Olive oil, as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Start with a layer of thinly sliced russet potatoes at the bottom of the baking dish and drizzle them with olive oil.
  3. Next, add a layer of browned and crumbled lean ground beef.
  4. Follow with a layer of sliced onions, separated into rings for even cooking.
  5. Top the onions with sliced tomatoes or canned diced tomatoes, spreading them evenly.
  6. Finish with a layer of chopped green bell peppers.
  7. Season each layer with kosher salt and freshly ground black pepper to enhance the flavors.
  8. Cover the casserole with aluminum foil and bake for 2 hours, ensuring all the flavors meld together.
  9. Once baked, remove from the oven and let it cool slightly before serving.

Notes

  • Parboil the potato slices for 3-5 minutes before layering them for even cooking and enhanced flavor absorption.
  • This dish can be prepared a day ahead. Assemble and refrigerate, then bake when ready to serve.
  • For a healthier version, use ground turkey or chicken instead of ground beef.
  • If desired, add a bit of cheese to the top during the last 10 minutes of baking for a cheesy crust.
