Description

These Southern Pecan Pralines are a classic homemade Southern candy made with butter, granulated sugar, brown sugar, heavy cream, and plenty of crunchy pecans. They have a rich, buttery caramel flavor and a soft, slightly crumbly texture that makes every bite irresistible. Perfect for holiday dessert trays, homemade gifts, or everyday sweet treats, these easy pecan pralines are prepared on the stovetop and require just a few simple ingredients.

Ingredients

Scale
  • ½ cup unsalted butter, cut into tablespoons
  • 1½ cups granulated sugar
  • 1½ cups light brown sugar, packed
  • 1½ cups heavy cream
  • 1 tablespoon light corn syrup
  • ¼ teaspoon fine sea salt
  • 2 cups pecan halves
  • 1 cup chopped pecans
  • 2 teaspoons vanilla extract
  • Cooking spray, for preparing the baking sheets

Instructions

  1. Line three baking sheets with aluminum foil and lightly coat them with cooking spray. Set aside.
  2. Add the unsalted butter, granulated sugar, light brown sugar, heavy cream, light corn syrup, and fine sea salt to a large, heavy-bottomed saucepan or Dutch oven.
  3. Place the saucepan over medium-low heat. Stir occasionally until the butter melts and the sugars dissolve completely.
  4. Increase the heat to medium and bring the mixture to a gentle boil, stirring occasionally and scraping the bottom of the pan to prevent sticking.
  5. Cook until a candy thermometer reaches 236°F (soft-ball stage), approximately 6–7 minutes after reaching a low boil.
  6. Remove the saucepan from the heat. Add the pecan halves, chopped pecans, and vanilla extract. Stir until the pecans are evenly coated.
  7. Stop stirring and allow the mixture to cool naturally to approximately 170°F, about 15 minutes.
  8. Using a wooden spoon, stir the mixture for approximately one minute until it begins to thicken while remaining slightly glossy.
  9. Immediately drop heaping tablespoons of the praline mixture onto the prepared baking sheets, leaving space between each candy.
  10. Allow the Southern Pecan Pralines to rest at room temperature for approximately 8 hours or overnight until completely hardened. Serve and enjoy!

Notes

  • Use a candy thermometer to ensure the sugar mixture reaches exactly 236°F for the proper soft-ball stage.
  • Use a large, heavy-bottomed saucepan or Dutch oven to prevent the bubbling sugar mixture from overflowing.
  • Do not stir the mixture while it cools from 236°F to 170°F.
  • Stir with a wooden spoon for approximately one minute after the mixture reaches 170°F.
  • Work quickly when portioning the pralines because the mixture thickens as it cools.
  • Allow the pralines to set for approximately 8 hours or overnight at room temperature.
  • You can speed up the setting process by placing the pralines in the refrigerator.
  • Small white spots on the finished candies are normal and result from sugar crystallization.
  • Store in an airtight container at room temperature for up to 10 days.
  • Freeze in a freezer-safe container for up to 3 months. Separate layers with parchment paper and thaw at room temperature before serving.
