Instructions

  1. Heat the olive oil in a large Dutch oven over medium heat. Add the diced onion and cook for 4 to 5 minutes until softened. Stir in the minced garlic and cook for 1 minute.
  2. Add the chicken breasts and chicken broth. Bring to a boil, reduce the heat, and simmer for 20 to 25 minutes until the chicken is fully cooked.
  3. Remove the chicken from the pot and shred it using two forks. Set aside.
  4. Whisk together the milk and cornstarch until smooth. Stir the mixture into the broth and cook until slightly thickened.
  5. Return the shredded chicken to the pot. Add the optional carrots and celery if using, and season with salt and black pepper.
  6. In a mixing bowl, combine the flour, baking powder, and salt. Cut in the shortening until crumbly. Stir in the buttermilk until a soft dough forms.
  7. Lightly flour a work surface and roll the dough to about 1/4-inch thick. Cut into 1-inch by 2-inch strips.
  8. Bring the broth to a gentle simmer and carefully add the dumpling strips one at a time, stirring gently to prevent sticking.
  9. Simmer for 15 to 20 minutes until the dumplings are tender and cooked through.
  10. Taste and adjust seasoning if needed. Garnish with chopped parsley and serve hot.
