Description

These Soy Garlic Chicken Thighs are juicy, sticky, and packed with umami flavor from a rich soy-garlic marinade. Perfectly caramelized and ready in just 30 minutes, this easy chicken dinner is ideal for busy weeknights or weekend meal prep.

Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs: provides rich flavor and juicy texture
  • 1/4 cup soy sauce: adds deep umami flavor
  • 4 cloves garlic, minced: for aromatic punch
  • 2 tablespoons brown sugar: balances saltiness with sweetness
  • 1 tablespoon sesame oil: adds nutty depth
  • 1/4 cup water: dilutes marinade for even coating
  • 2 tablespoons neutral oil (canola or avocado): for searing chicken
  • 2 stalks green onions, chopped: garnish for color and freshness
  • 1/2 teaspoon chili flakes (optional): adds subtle heat

Instructions

  1. In a large bowl, combine soy sauce, garlic, brown sugar, sesame oil, and water. Stir to mix well.
  2. Add chicken thighs to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes or overnight for best flavor.
  3. Heat neutral oil in a nonstick skillet over medium-high heat.
  4. Place marinated chicken thighs skin-side down and sear for 4–5 minutes until golden brown.
  5. Flip the chicken thighs and reduce heat to medium. Pour the remaining marinade over the chicken.
  6. Cover and cook for 10 minutes.
  7. Uncover and continue to cook for another 10–15 minutes, basting occasionally, until the sauce thickens into a glaze and internal temperature reaches 165°F.
  8. Garnish with chopped green onions and optional chili flakes. Serve hot over rice or noodles.

Notes

  • Double the marinade if you want extra sauce to drizzle over rice or vegetables.
  • Keep an eye on the glaze during the final minutes to avoid burning due to sugar content.
  • For a gluten-free option, use tamari or coconut aminos instead of soy sauce.
  • Boneless thighs or chicken breasts can be used, but cooking times may vary.
