Description

Spiced Apple Cider Donut Loaf is a moist and tender quick bread infused with apple cider, cinnamon, and nutmeg, then finished with a buttery cinnamon sugar topping for a classic donut-inspired flavor. Perfect for fall baking, brunch, or a cozy dessert.

Ingredients

Scale
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) apple cider
  • 1/2 cup (120g) sour cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons (28g) melted butter (for topping)
  • 1/4 cup (50g) cinnamon sugar mixture (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the apple cider, sour cream, and vanilla extract until fully combined.
  6. Gradually fold the dry ingredients into the wet ingredients, mixing just until combined. Do not overmix.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Brush the warm loaf with melted butter and sprinkle evenly with the cinnamon sugar mixture.
  11. Allow to cool completely before slicing and serving.

Notes

  • For stronger apple flavor, reduce the apple cider on the stovetop before adding to the batter.
  • Ensure butter and eggs are at room temperature for a smooth batter.
  • Avoid overmixing to maintain a tender crumb.
  • Store tightly wrapped at room temperature for up to 3 days or freeze for up to 3 months.
