Description

- 1 cup (205g) light brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1/4 cup (55g) pure maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups (330g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 tablespoon pure maple syrup, for the spiced maple butter
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/2 cup (100g) granulated sugar, for the cinnamon sugar
- 1 tablespoon ground cinnamon, for the cinnamon sugar
- 2 tablespoons unsalted butter, for the maple icing
- 3 tablespoons pure maple syrup, for the maple icing
- 3/4 cup (75g) powdered sugar
Instructions
- Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- Whisk together the all-purpose flour, baking powder, baking soda, and kosher salt in a medium bowl. Set aside.
- Remove 1 tablespoon of butter from the 1 cup of softened butter and place it in a small bowl. Place the remaining butter in the bowl of a stand mixer or a large mixing bowl.
- Measure the brown sugar and remove 1 tablespoon. Add that tablespoon to the reserved butter and add the remaining brown sugar to the mixing bowl.
- Add 1/4 cup granulated sugar to the mixing bowl. Beat the butter and sugars on medium-high speed for about 2 minutes, until smooth and lighter in color.
- Scrape down the bowl, then add 1/4 cup pure maple syrup, the egg, and vanilla extract. Mix on medium-high speed for about 1 minute.
- Add the dry ingredients and mix just until combined. Finish folding the dough with a rubber spatula, scraping the bottom and sides to incorporate any remaining flour.
- Make the spiced maple butter by combining the reserved tablespoon of butter and brown sugar with 1 tablespoon maple syrup, 2 teaspoons cinnamon, ginger, nutmeg, and cloves.
- Drop small spoonfuls of the spiced maple butter throughout the cookie dough. Gently fold about four times to create visible ribbons without completely blending the mixture into the dough.
- Prepare the cinnamon sugar by combining 1/2 cup granulated sugar with 1 tablespoon ground cinnamon in a small bowl.
- Use a 2-ounce cookie scoop or 1/4-cup measure to portion the dough. Roll each portion in the cinnamon sugar until evenly coated.
- Place 3 to 4 cookies on the prepared baking sheet, leaving plenty of room for spreading.
- Bake for 6 minutes. Open the oven and carefully lift and drop the baking sheet against the oven rack about 3 times.
- Bake for another 2 minutes and repeat the pan-banging process. Continue baking and pan banging in 2-minute intervals until the cookies have baked for approximately 12 minutes total.
- Remove the cookies when the edges are wrinkled and set but the centers remain soft. Allow them to cool completely and repeat with the remaining dough.
- Make the maple icing by whisking 2 tablespoons melted unsalted butter with 3 tablespoons pure maple syrup. Whisk in the powdered sugar until smooth.
- Transfer the icing to a piping bag or small food-storage bag, snip off a tiny corner, and drizzle over the cooled Spiced Maple Butter Cookies before serving.
Notes
- For the most accurate results, weigh the flour. If using measuring cups, spoon the flour into the cup and level it rather than scooping directly from the container.
- Use standard unsalted butter rather than higher-fat European or Irish-style butter, as additional butterfat can cause excessive spreading.
