Description

Spooky Rocky Road is an easy no-bake Halloween treat made with milk and dark chocolate, crunchy rich tea biscuits, mini marshmallows, Smarties, and spooky white chocolate ghosts and cobwebs. Add optional orange extract for a delicious chocolate orange twist.

Ingredients

Scale
  • 60 g white chocolate
  • 250 g milk chocolate
  • 120 g dark chocolate
  • A few dark or milk chocolate chips
  • 140 g butter
  • 4 tbsp golden syrup
  • 150 g rich tea biscuits
  • 50 g mini marshmallows, preferably frozen for 2 hours before using
  • 100 g Smarties
  • 1/4 tsp orange extract, optional

Instructions

  1. Melt the white chocolate. Line a tray or large plate with greaseproof paper, transfer the chocolate to a small piping bag, and pipe ghost and cobweb shapes. Add chocolate chips for the ghosts’ eyes and mouths, then refrigerate until set.
  2. Place the milk chocolate, dark chocolate, butter, and golden syrup in a saucepan over very low heat. Stir regularly until completely melted and smooth.
  3. Stir in the orange extract if making the chocolate orange variation.
  4. Reserve 150 ml of the melted chocolate mixture for the topping. Remove the remaining mixture from the heat.
  5. Break the rich tea biscuits into small pieces and fold them into the chocolate mixture.
  6. Remove the orange Smarties and reserve them for decorating. Fold the remaining Smarties into the mixture.
  7. Gently mix in the mini marshmallows.
  8. Line a 20 x 26 cm tray with baking parchment. Spoon in the rocky road mixture and press it down firmly to create an even, compact layer.
  9. Pour the reserved 150 ml chocolate mixture over the top. Spread gently with a spoon or spatula to fill the gaps and create a smoother surface.
  10. Decorate with the white chocolate ghosts and cobwebs while the topping is still slightly warm. Scatter the reserved orange Smarties over the top.
  11. Refrigerate for about 2 hours or until completely firm. For best results, chill overnight.
  12. Once set, cut the Spooky Rocky Road into squares and serve.

Notes

  • Use milk and dark chocolate intended for baking because it melts easily and is less likely to seize.
  • Keep the heat very low when melting the chocolate, butter, and golden syrup, and stir regularly to prevent scorching.
  • Freeze the mini marshmallows for about 2 hours before adding them for best results.
  • Break the biscuits into small chunks rather than fine crumbs to preserve the characteristic rocky road crunch.
  • Press the mixture firmly into the tray so the finished rocky road holds together when sliced.
  • The rocky road can be eaten after about 2 hours of chilling, but setting it overnight produces a firmer texture.
  • Orange extract is optional and gives the Spooky Rocky Road a chocolate orange flavor.
