  • 16 oz orecchiette pasta
  • 4 quarts water
  • 2 tablespoons salt
  • 2 cups fresh peas (or frozen peas)
  • 2 cups snow peas or sugar snap peas
  • 1 cup asparagus tips, trimmed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 4 garlic cloves, roughly chopped
  • 10 oz mushrooms (cremini or button), sliced
  • 2 cups fresh leafy greens (spinach, arugula, or chard), chopped
  • 2 large eggs, whisked
  • 1/2 cup grated parmesan or pecorino cheese
  • 1 ball burrata cheese (about 4 oz)
  • 1 teaspoon lemon zest (from 1 small lemon)
  • 1/4 cup fresh herbs (basil, parsley, mint, or dill), chopped
  • 1/2 teaspoon freshly cracked black pepper


Instructions

  1. Bring 4 quarts of water and 2 tablespoons salt to a boil in a large pot. Add the orecchiette pasta and cook until al dente according to package instructions, about 7–9 minutes.
  2. During the last minute of cooking, add the fresh peas, snow peas, and asparagus tips to the pasta water to blanch them quickly.
  3. Drain the pasta and vegetables together, reserving 1–2 cups of the hot pasta cooking water. Do not rinse.
  4. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until soft.
  5. Add the sliced mushrooms and garlic to the skillet. Cook for 7–8 minutes until the mushrooms are golden and tender. Season with black pepper.
  6. Add the chopped leafy greens and sauté for about 1 minute until just wilted. Remove the skillet from heat.
  7. In a small bowl, whisk the eggs. Slowly add 3 tablespoons of hot pasta water while whisking continuously to temper the eggs.
  8. Return the drained pasta and vegetables to the warm pot. Pour the tempered egg mixture over the pasta and stir gently to coat.
  9. Add the sautéed mushrooms and onion mixture to the pasta. Stir in half of the parmesan cheese, half of the lemon zest, and half of the fresh herbs.
  10. Gradually add reserved pasta water while stirring until the pasta becomes glossy and lightly saucy.
  11. Taste and adjust seasoning with additional salt and pepper if needed.
  12. Transfer the pasta to a serving platter and tear the burrata into pieces over the top.
  13. Finish with the remaining herbs, lemon zest, and extra parmesan cheese before serving immediately.

  • Salt the pasta water generously to ensure the pasta itself is flavorful.
  • Reserve enough pasta water to adjust the sauce consistency and keep the dish creamy.
  • Temper the eggs slowly with hot pasta water to prevent scrambling.
