Starbucks Pumpkin Cream Cheese Muffins are soft, moist pumpkin spice muffins filled with a sweet and tangy cream cheese center and topped with optional toasted pumpkin seeds. This easy Starbucks copycat recipe makes 12 bakery-style muffins in about 30 minutes.
Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon pumpkin spice
- 1 1/2 cups pure pumpkin puree
- 1/4 cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1 large egg
- 2 teaspoons toasted pumpkin seeds, optional
- 4 ounces cream cheese, softened
- 1/2 teaspoon vanilla extract, for the filling
- 1 teaspoon all-purpose flour, for the filling
- 2 tablespoons plus 2 teaspoons granulated sugar, for the filling
- 1 teaspoon milk
Instructions
- Preheat the oven to 350°F (175°C). Line a standard 12-cup muffin pan with paper liners or lightly grease the cups.
- In a large bowl, whisk together 1 1/2 cups flour, 3/4 cup sugar, baking powder, baking soda, salt, and pumpkin spice.
- In a separate medium bowl, whisk together the pumpkin puree, melted and cooled butter, 1 teaspoon vanilla extract, and egg until smooth.
- Make a well in the dry ingredients and pour in the pumpkin mixture. Stir gently until just combined and no dry pockets of flour remain. Do not overmix.
- Divide the pumpkin batter evenly among the 12 prepared muffin cups.
- Make the cream cheese filling by combining the softened cream cheese, 1/2 teaspoon vanilla extract, 1 teaspoon flour, 2 tablespoons plus 2 teaspoons sugar, and milk. Beat with a hand mixer on medium speed until smooth.
- Transfer the cream cheese mixture to a piping bag or zip-top bag with a small corner snipped off.
- Insert the tip slightly into the center of each muffin and pipe the cream cheese filling into the batter, dividing it evenly and leaving a small dollop visible on top.
- Sprinkle the toasted pumpkin seeds around the cream cheese centers, if using.
- Bake for 17 to 19 minutes, or until a toothpick inserted into the pumpkin portion of a muffin comes out mostly clean.
- Cool the muffins in the pan for 10 minutes, then transfer them to a wire rack to cool completely before serving or storing.
Notes
- Use pure pumpkin puree, not pumpkin pie filling, for the correct sweetness, spice level, and texture.
- Avoid overmixing the muffin batter; stir only until the dry ingredients are incorporated.
- Use fully softened cream cheese to create a smooth filling without lumps.
- Check doneness by inserting a toothpick into the pumpkin portion rather than the cream cheese center.
- The toasted pumpkin seeds are optional and can be omitted or replaced with chopped pecans or a light sprinkle of cinnamon sugar.
- For mini muffins, begin checking for doneness after 10 to 12 minutes.
- Store cooled muffins in an airtight container in the refrigerator for up to 4 days.
- Freeze cooled muffins in a freezer-safe container for up to 3 months and thaw overnight in the refrigerator.
