Description

This Strawberry Cake Roll is a light and fluffy sponge cake filled with sweet whipped cream and fresh strawberries, then rolled into a beautiful and delicious dessert perfect for any occasion.


Ingredients

  • 1/4 teaspoon vinegar
  • 1 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs (room temperature)
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 cups whipping cream
  • 2 tablespoons sugar (for whipped cream)
  • 1 teaspoon vanilla extract (for filling)
  • 1 lb fresh strawberries (sliced)
  • 2 tablespoons powdered sugar (for dusting towel)


Instructions

  1. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper, then lightly grease it.
  2. In a small bowl, mix milk and vinegar and let sit for 3–5 minutes to create a buttermilk substitute.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, beat eggs until light and fluffy, then gradually add sugar and mix well.
  5. Add the milk mixture and vanilla extract, mixing until smooth.
  6. Gently fold in the dry ingredients in two batches until just combined. Do not overmix.
  7. Spread batter evenly into the prepared pan, ensuring even thickness.
  8. Bake for 14–17 minutes or until a toothpick inserted in the center comes out clean.
  9. While baking, lay a clean kitchen towel and dust it with powdered sugar.
  10. Invert the hot cake onto the towel and carefully remove parchment paper.
  11. Roll the cake gently with the towel from the short side and let it cool completely.
  12. Whip cream with sugar and vanilla until stiff peaks form.
  13. Unroll the cooled cake, spread whipped cream and sliced strawberries evenly.
  14. Roll the cake back up tightly (without the towel) and place seam-side down.
  15. Top with extra whipped cream and strawberries, then refrigerate before serving.
