Instructions
- Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper, then lightly grease it.
- In a small bowl, mix milk and vinegar and let sit for 3–5 minutes to create a buttermilk substitute.
- In another bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat eggs until light and fluffy, then gradually add sugar and mix well.
- Add the milk mixture and vanilla extract, mixing until smooth.
- Gently fold in the dry ingredients in two batches until just combined. Do not overmix.
- Spread batter evenly into the prepared pan, ensuring even thickness.
- Bake for 14–17 minutes or until a toothpick inserted in the center comes out clean.
- While baking, lay a clean kitchen towel and dust it with powdered sugar.
- Invert the hot cake onto the towel and carefully remove parchment paper.
- Roll the cake gently with the towel from the short side and let it cool completely.
- Whip cream with sugar and vanilla until stiff peaks form.
- Unroll the cooled cake, spread whipped cream and sliced strawberries evenly.
- Roll the cake back up tightly (without the towel) and place seam-side down.
- Top with extra whipped cream and strawberries, then refrigerate before serving.
