Instructions
- Preheat the oven to 375°F (190°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, combine the flour, brown sugar, and baking powder.
- Add the melted butter, 1 egg, and 1 teaspoon vanilla extract. Mix gently until a coarse crumb forms without overmixing.
- In another bowl, beat the softened cream cheese, powdered sugar, remaining egg, and remaining vanilla extract until smooth and creamy.
- In a separate bowl, stir together the diced strawberries, lemon juice, lemon zest, granulated sugar, and cornstarch.
- Press half of the crumb mixture firmly into the prepared baking pan to create the crust.
- Spread the cheesecake filling evenly over the crust.
- Spoon the strawberry mixture over the cheesecake layer, leaving behind any excess liquid.
- Sprinkle the remaining crumb mixture evenly over the top.
- Bake for 40-45 minutes or until the topping is golden brown and the center is just set.
- Allow the bars to cool for at least 30 minutes, then refrigerate for several hours before slicing and serving.
