Description

  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon baking powder

  • 1/4 cup powdered sugar
  • 2 cups fresh strawberries, diced
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch


Instructions

  1. Preheat the oven to 375°F (190°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine the flour, brown sugar, and baking powder.
  3. Add the melted butter, 1 egg, and 1 teaspoon vanilla extract. Mix gently until a coarse crumb forms without overmixing.
  4. In another bowl, beat the softened cream cheese, powdered sugar, remaining egg, and remaining vanilla extract until smooth and creamy.
  5. In a separate bowl, stir together the diced strawberries, lemon juice, lemon zest, granulated sugar, and cornstarch.
  6. Press half of the crumb mixture firmly into the prepared baking pan to create the crust.
  7. Spread the cheesecake filling evenly over the crust.
  8. Spoon the strawberry mixture over the cheesecake layer, leaving behind any excess liquid.
  9. Sprinkle the remaining crumb mixture evenly over the top.
  10. Bake for 40-45 minutes or until the topping is golden brown and the center is just set.
  11. Allow the bars to cool for at least 30 minutes, then refrigerate for several hours before slicing and serving.
