- 5 (8-inch) flour tortillas
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1 cup fresh strawberries, chopped

- 2 teaspoons water
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- 1 cup heavy whipping cream
- 1 cup cream cheese, softened
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
- Additional graham cracker crumbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut 4 to 5 small rounds from each tortilla using a round cookie cutter.
- Brush each tortilla round with melted butter and coat evenly with graham cracker crumbs.
- Turn a muffin tin upside down and place each tortilla round between the muffin cups to form taco shapes.
- Bake for about 10 minutes or until lightly golden and crisp. Let the shells cool completely.
- In a saucepan, combine chopped strawberries, granulated sugar, and 2 teaspoons of water. Bring to a boil, then reduce to a simmer until the strawberries soften.
- Mix the cornstarch with 1 tablespoon of cold water until smooth. Stir it into the strawberry mixture and cook until thickened. Remove from the heat and cool completely.
- In a large mixing bowl, beat the softened cream cheese, heavy whipping cream, powdered sugar, vanilla extract, and lemon zest for about 2 minutes until thick and fluffy.
- Refrigerate the cheesecake filling for at least 30 minutes.
- Transfer the filling to a piping bag and pipe it into the cooled taco shells.
- Top each taco with a spoonful of the cooled strawberry topping.
- Garnish with extra graham cracker crumbs if desired and serve immediately.
