Description

Strawberry Crunch Cheesecake Cones are a fun, no-bake dessert made with creamy cheesecake filling, fresh strawberries, and a crunchy strawberry topping served inside crispy cones.

Ingredients

Scale
  • 6 ice cream cones
  • 1 cup fresh strawberries, sliced
  • 16 oz (2 blocks) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 10 golden sandwich cookies
  • 2 tablespoons freeze-dried strawberries
  • 2 tablespoons instant vanilla pudding mix (dry)
  • 2 tablespoons strawberry gelatin powder (dry)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk
  • 1/8 teaspoon vanilla extract (for glaze)
  • 1 pinch salt

Instructions

  1. In a large bowl, beat the softened cream cheese, 1/2 cup powdered sugar, and 1 teaspoon vanilla extract until smooth and fluffy.
  2. In a food processor, crush the golden cookies and freeze-dried strawberries until crumbly.
  3. Transfer crumbs to a bowl and mix in the dry pudding mix and strawberry gelatin powder.
  4. In another bowl, whisk together 1 cup powdered sugar, milk, 1/8 teaspoon vanilla extract, and a pinch of salt to make the glaze.
  5. Place sliced strawberries at the bottom of each cone.
  6. Fill each cone with the cheesecake mixture using a spoon or piping bag.
  7. Add additional strawberries on top of the filling.
  8. Drizzle glaze over each cone.
  9. Sprinkle the strawberry crunch topping generously over the cones.
  10. Serve immediately for best texture.

Notes

  • Use room temperature cream cheese for a smoother filling.
  • Assemble cones just before serving to prevent sogginess.
  • You can prepare the filling and topping ahead of time.
  • Store leftovers in the refrigerator for up to 2 days, though cones may soften.
  • Try swapping strawberries with peaches or blueberries for variation.
