Description

Strawberry Jello American Flag Cake is a festive patriotic poke cake made with vanilla cake mix, strawberry gelatin, whipped topping, fresh strawberries, and blueberries. The gelatin-infused cake stays extra moist and refreshing, making it a perfect dessert for Fourth of July celebrations, Memorial Day gatherings, summer picnics, and backyard barbecues.

  • 1 cup water
  • 1/3 cup canola oil
  • 3 large eggs
  • 3 oz strawberry Jello mix
  • 1 cup boiling water
  • 1/2 cup cold water
  • 8 oz whipped topping (Cool Whip)
  • 1 pint fresh blueberries, washed and dried
  • 1 1/2 quarts fresh strawberries, washed, dried, stemmed, and sliced


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease the bottom of a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the vanilla cake mix, 1 cup water, canola oil, and eggs according to package directions until smooth.
  3. Pour the batter into the prepared baking pan and spread evenly.
  4. Bake for 24 to 29 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow the cake to cool for 15 to 20 minutes.
  6. In a separate bowl, dissolve the strawberry Jello mix in 1 cup boiling water, stirring until completely dissolved.
  7. Add 1/2 cup cold water and mix well.
  8. Using a fork, poke holes evenly across the entire surface of the cake, reaching about three-quarters of the way through.
  9. Slowly pour the strawberry gelatin mixture over the cake, allowing it to soak into the holes.
  10. Let the cake cool completely.
  11. Spread the whipped topping evenly over the cooled cake using a spatula.
  12. Arrange blueberries in the upper-left corner of the cake to create the flag’s star field.
  13. Place rows of sliced strawberries across the cake to form the red stripes of the American flag.
  14. Cover the cake and refrigerate for at least 3 to 4 hours before serving.
  15. Serve chilled and enjoy.
