Instructions

  1. Cream the softened butter and granulated sugar together until light and fluffy.
  2. Add the egg, lemon extract, strawberry extract, salt, baking powder, freeze-dried strawberry powder, lemon zest, and optional food coloring. Mix until fully combined.
  3. Gradually add the flour, one cup at a time, mixing until a soft, non-sticky dough forms. Add the remaining flour only if needed.
  4. Roll the dough between two sheets of parchment paper to about 1/4-inch thickness.
  5. Refrigerate the rolled dough for at least 30 minutes until firm.
  6. Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
  7. Cut the chilled dough into desired shapes using cookie cutters and place them on the prepared baking sheets.
  8. Bake for 7–9 minutes, until the tops appear matte without noticeable browning.
  9. Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack.
  10. Cool completely before decorating with lemon royal icing or your favorite cookie icing.
