- 2 1/2 cups diced strawberries
- 1 1/2 tsp cornstarch or arrowroot
- 1 tbsp pure maple syrup or sweetener of choice
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper.
- In a large bowl, combine the oats, flour, cinnamon, salt, sugar, and baking powder. Stir well.
- Stir in the oil or melted butter, and mix until you have a dough-like consistency.
- Firmly press two-thirds of the dough into the prepared pan to form the base layer.
- In a medium bowl, combine the strawberries, cornstarch, and maple syrup. Stir until the berries are well-coated.
- Spread the strawberry filling evenly over the oat base.
- Sprinkle the reserved oat dough on top, pressing it down gently.
- Bake for 45 minutes, or until the top is golden brown.
- Let the bars cool, then refrigerate for at least an hour to firm up before cutting into squares.

- If using frozen strawberries, thaw them first and blot away excess moisture.
