Description

Ingredients

  • 1 1/2 cups quick oats or rolled oats
  • 2/3 cup flour (spelt, white, or oat)
  • 1/2 cup sugar or xylitol
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup oil or butter
  • 2 1/2 cups diced strawberries
  • 1 1/2 tsp cornstarch or arrowroot
  • 1 tbsp pure maple syrup or sweetener of choice


Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper.
  2. In a large bowl, combine the oats, flour, cinnamon, salt, sugar, and baking powder. Stir well.
  3. Stir in the oil or melted butter, and mix until you have a dough-like consistency.
  4. Firmly press two-thirds of the dough into the prepared pan to form the base layer.
  5. In a medium bowl, combine the strawberries, cornstarch, and maple syrup. Stir until the berries are well-coated.
  6. Spread the strawberry filling evenly over the oat base.
  7. Sprinkle the reserved oat dough on top, pressing it down gently.
  8. Bake for 45 minutes, or until the top is golden brown.
  9. Let the bars cool, then refrigerate for at least an hour to firm up before cutting into squares.

Notes

  • Press the dough firmly to avoid crumbly bars.
  • If using frozen strawberries, thaw them first and blot away excess moisture.
  • Store the bars in an airtight container in the fridge for up to a week.
  • For extra richness, top with a drizzle of peanut butter or coconut butter.
