- 3/4 cup old-fashioned oats
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1/2 teaspoon salt
- 2 cups coarsely chopped fresh strawberries
- 1/3 cup granulated sugar
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
Instructions
- Preheat oven to 350°F. Line an 8-inch square pan with aluminum foil and spray with cooking spray.
- Melt the butter in a large, microwave-safe bowl.
- Add flour, oats, granulated sugar, brown sugar, and salt. Stir until combined, leaving some larger clumps.
- Set aside 1 cup of the mixture for the crumble topping and press the rest into the prepared pan to form the crust.
- In a separate bowl, combine chopped strawberries, granulated sugar, lemon juice, and cornstarch. Stir to coat the strawberries evenly.
- Spread the strawberry mixture over the crust in the pan.
- Sprinkle the reserved crumble mixture over the strawberry layer, pressing it gently to form larger crumbles.
- Bake for 50 minutes, or until the edges are golden and the filling is bubbly. Let cool for at least 1 hour before slicing.
Notes
- For best results, use fresh strawberries as frozen ones may release more juice and alter the texture.
- Allow the bars to cool completely before slicing to avoid them falling apart.
- Storage: Bars will keep airtight at room temperature for up to a week, or in the fridge for up to 10 days.
- If you prefer a less sweet version, reduce the amount of sugar in the crust or filling.
