Description

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon salt
  • 2 cups coarsely chopped fresh strawberries
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch


Instructions

  1. Preheat oven to 350°F. Line an 8-inch square pan with aluminum foil and spray with cooking spray.
  2. Melt the butter in a large, microwave-safe bowl.
  3. Add flour, oats, granulated sugar, brown sugar, and salt. Stir until combined, leaving some larger clumps.
  4. Set aside 1 cup of the mixture for the crumble topping and press the rest into the prepared pan to form the crust.
  5. In a separate bowl, combine chopped strawberries, granulated sugar, lemon juice, and cornstarch. Stir to coat the strawberries evenly.
  6. Spread the strawberry mixture over the crust in the pan.
  7. Sprinkle the reserved crumble mixture over the strawberry layer, pressing it gently to form larger crumbles.
  8. Bake for 50 minutes, or until the edges are golden and the filling is bubbly. Let cool for at least 1 hour before slicing.

Notes

  • For best results, use fresh strawberries as frozen ones may release more juice and alter the texture.
  • Allow the bars to cool completely before slicing to avoid them falling apart.
  • Storage: Bars will keep airtight at room temperature for up to a week, or in the fridge for up to 10 days.
