Description

Instructions

  1. Whisk together flour, sugar, and salt in a large bowl. Add cold butter and cut it into the flour mixture until coarse crumbs form.
  2. Add ice-cold water gradually and mix until the dough comes together. Shape into a disk, wrap, and refrigerate for at least 1 hour.
  3. Combine sliced peaches, strawberries, sugar, cornstarch, and vanilla extract in a bowl. Mix gently and set aside.
  4. Roll the chilled dough into a rough 12-inch circle on a lightly floured surface and transfer it to a parchment-lined baking sheet.
  5. Place the fruit filling in the center of the dough, leaving a border around the edges.
  6. Fold the dough edges over the fruit, creating overlapping pleats. Brush the crust with egg wash and sprinkle with coarse sugar.
  7. Chill the assembled galette for 15 to 20 minutes while the oven preheats.
  8. Bake at 425°F for 30 to 35 minutes or until the crust is golden brown and the filling is bubbling. Cool slightly before serving.
