Instructions
- Whisk together flour, sugar, and salt in a large bowl. Add cold butter and cut it into the flour mixture until coarse crumbs form.
- Add ice-cold water gradually and mix until the dough comes together. Shape into a disk, wrap, and refrigerate for at least 1 hour.
- Combine sliced peaches, strawberries, sugar, cornstarch, and vanilla extract in a bowl. Mix gently and set aside.
- Roll the chilled dough into a rough 12-inch circle on a lightly floured surface and transfer it to a parchment-lined baking sheet.
- Place the fruit filling in the center of the dough, leaving a border around the edges.
- Fold the dough edges over the fruit, creating overlapping pleats. Brush the crust with egg wash and sprinkle with coarse sugar.
- Chill the assembled galette for 15 to 20 minutes while the oven preheats.
- Bake at 425°F for 30 to 35 minutes or until the crust is golden brown and the filling is bubbling. Cool slightly before serving.
