Description

This Strawberry Pop Tart Pie is a nostalgic dessert featuring a flaky pie crust filled with a sweet, thick strawberry filling and topped with a smooth vanilla glaze and colorful sprinkles. It combines the classic flavor of strawberry Pop-Tarts with the comfort of a homemade pie.

Ingredients

Scale
  • 2 pre-made pie crusts (9-inch each)
  • 5 cups fresh strawberries, sliced
  • 1/2 cup granulated sugar
  • 1 pinch salt
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/8 teaspoon vanilla extract
  • 2 tablespoons rainbow sprinkles
  • 1 teaspoon non-stick spray

Instructions

  1. Add sliced strawberries to a saucepan, sprinkle with sugar and salt, and let sit for 15 minutes.
  2. Cook the strawberries over medium heat for 15 minutes until softened and juicy.
  3. Mix cornstarch with water to create a slurry, then slowly stir it into the strawberry mixture.
  4. Continue cooking and stirring for 5 minutes until the filling thickens. Remove from heat and cool slightly.
  5. Preheat oven to 375°F (190°C) and grease a 9-10 inch pie dish.
  6. Place one pie crust into the dish and press it gently into the edges.
  7. Spread the cooled strawberry filling evenly over the crust.
  8. Top with the second pie crust and seal edges using a fork.
  9. Cut a small “X” in the center to allow steam to escape.
  10. Bake for 30-40 minutes until golden brown and bubbly.
  11. Cool the pie for at least 2 hours before adding glaze.
  12. Whisk powdered sugar, milk, and vanilla extract to make the glaze.
  13. Drizzle glaze over the pie and top with sprinkles. Let set before serving.

Notes

  • Allow the filling to cool before assembling to avoid a soggy crust.
  • Use frozen strawberries if fresh are unavailable, but thaw and drain first.
  • Do not overfill the pie to prevent leakage during baking.
  • Adjust glaze consistency by adding more milk or powdered sugar.
  • Store leftovers in an airtight container for up to 4 days.
