Ingredients
Scale
- 2 pre-made pie crusts (9-inch each)
- 5 cups fresh strawberries, sliced
- 1/2 cup granulated sugar
- 1 pinch salt
- 2 tablespoons water
- 1 tablespoon cornstarch
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/8 teaspoon vanilla extract
- 2 tablespoons rainbow sprinkles
- 1 teaspoon non-stick spray
Instructions
- Add sliced strawberries to a saucepan, sprinkle with sugar and salt, and let sit for 15 minutes.
- Cook the strawberries over medium heat for 15 minutes until softened and juicy.
- Mix cornstarch with water to create a slurry, then slowly stir it into the strawberry mixture.
- Continue cooking and stirring for 5 minutes until the filling thickens. Remove from heat and cool slightly.
- Preheat oven to 375°F (190°C) and grease a 9-10 inch pie dish.
- Place one pie crust into the dish and press it gently into the edges.
- Spread the cooled strawberry filling evenly over the crust.
- Top with the second pie crust and seal edges using a fork.
- Cut a small “X” in the center to allow steam to escape.
- Bake for 30-40 minutes until golden brown and bubbly.
- Cool the pie for at least 2 hours before adding glaze.
- Whisk powdered sugar, milk, and vanilla extract to make the glaze.
- Drizzle glaze over the pie and top with sprinkles. Let set before serving.
Notes
- Allow the filling to cool before assembling to avoid a soggy crust.
- Use frozen strawberries if fresh are unavailable, but thaw and drain first.
- Do not overfill the pie to prevent leakage during baking.
- Adjust glaze consistency by adding more milk or powdered sugar.
- Store leftovers in an airtight container for up to 4 days.
