Description

These strawberry sugar cookies are soft, chewy, and full of sweet strawberry flavor with a sparkling sugar coating. They are easy to make, beautifully pink, and perfect for holidays, parties, or anytime you want a fruity twist on a classic sugar cookie.


Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons freeze-dried strawberry powder
  • 1/2 teaspoon strawberry extract
  • 2 to 3 drops pink or red food coloring (optional)
  • 1/4 cup sparkling strawberry sugar, for rolling


Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
  3. In a large mixing bowl, beat the softened unsalted butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
  4. Add the egg, vanilla extract, strawberry extract, and freeze-dried strawberry powder. Mix until smooth. Add the food coloring if using and blend until evenly tinted.
  5. Gradually add the dry ingredients to the wet mixture and mix just until a soft dough forms. Do not overmix.
  6. Scoop about 1 1/2 tablespoons of dough and roll into balls. Roll each dough ball in the sparkling strawberry sugar to coat.
  7. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10 to 12 minutes, or until the edges are set and the centers still look slightly soft.
  9. Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Serve fresh or store in an airtight container for later.

Notes

  • Chill the dough for 20 to 30 minutes if your kitchen is warm or if the cookies spread too much.
  • Freeze-dried strawberry powder gives the best natural strawberry flavor without adding extra moisture.
  • Do not overbake; the cookies will continue to set as they cool.
