Description

- 1/2 teaspoon strawberry extract
- 2 to 3 drops pink or red food coloring (optional)
- 1/4 cup sparkling strawberry sugar, for rolling
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
- In a large mixing bowl, beat the softened unsalted butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
- Add the egg, vanilla extract, strawberry extract, and freeze-dried strawberry powder. Mix until smooth. Add the food coloring if using and blend until evenly tinted.
- Gradually add the dry ingredients to the wet mixture and mix just until a soft dough forms. Do not overmix.
- Scoop about 1 1/2 tablespoons of dough and roll into balls. Roll each dough ball in the sparkling strawberry sugar to coat.
- Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are set and the centers still look slightly soft.
- Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Serve fresh or store in an airtight container for later.
Notes
- Chill the dough for 20 to 30 minutes if your kitchen is warm or if the cookies spread too much.
- Freeze-dried strawberry powder gives the best natural strawberry flavor without adding extra moisture.
- Do not overbake; the cookies will continue to set as they cool.
