Ingredients

Scale
  • 2.753 pounds turkey breast: main protein, ideal for rolling and roasting
  • 4 ounces cream cheese, softened: adds creamy richness to the filling
  • 1 tablespoon minced garlic: brings aromatic depth
  • 1/3 cup chopped fresh spinach: adds color and earthy flavor
  • 1/3 cup chopped bacon pieces: adds salty, smoky crunch
  • 1/2 teaspoon salt: enhances overall flavor
  • 1/2 teaspoon cracked black pepper: adds a subtle kick
  • 1 tablespoon finely chopped parsley: adds freshness
  • 1 teaspoon finely chopped rosemary: brings earthy aroma
  • 1 teaspoon finely chopped thyme: adds herbal warmth
  • 2 tablespoons butter, melted: brushed over the top for golden finish
  • 1 tablespoon chopped fresh herbs (parsley, rosemary, thyme): used as garnish
  • 1/2 teaspoon garlic powder: used in spice rub for flavor depth
  • 1/2 teaspoon smoked paprika: adds smoky warmth
  • 1/4 teaspoon cracked black pepper: enhances the rub
  • 1/4 teaspoon salt: balances spice mix

Instructions

  1. Preheat oven to 400°F and grease a small roasting dish or sheet pan with oil, butter, or cooking spray.
  2. Place the turkey breast between two pieces of plastic wrap or in a Ziplock bag and pound to 1/4-inch thickness for even cooking.
  3. In a medium bowl, combine cream cheese, spinach, garlic, bacon, salt, pepper, parsley, rosemary, and thyme.
  4. Spread the filling evenly over the turkey breast, leaving a 1/2-inch border around the edges.
  5. Roll the turkey tightly from one long side to the other and secure with toothpicks or baker’s twine.
  6. Mix the garlic powder, smoked paprika, salt, and pepper, then rub the mixture all over the rolled turkey breast.
  7. Bake in the preheated oven for 15–25 minutes, until the internal temperature reaches 160°F.
  8. Switch to broil and cook for another 5 minutes until the outside is golden and slightly crispy.
  9. Let the turkey rest for 5–10 minutes, then brush with melted butter and fresh herbs.
  10. Slice into pinwheels and serve immediately.

Notes

  • Cooking time may vary depending on the thickness of the turkey breast.
  • A 5-pound turkey breast serves about 6–8 adults; 7 pounds serves 8–10.
  • Use bacon bits for a quicker prep—microwave briefly to crisp.
  • Substitute dried herbs with 1 teaspoon Italian seasoning if needed.
  • Reheat in the microwave at 50% power in 1-minute intervals to prevent the filling from leaking.
