  • 3 cups rhubarb, cut into 1-inch pieces (about 400g)
  • 1/2 cup granulated sugar (115g)
  • 1 1/2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (142g)
  • 1/2 cup granulated sugar (115g) for topping
  • 1/4 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 1/2 cup butter, melted (115g)
  • 1/2 teaspoon vanilla extract (for topping)
  • 1/4 teaspoon almond extract
  • 1/2 cup almonds, finely chopped (71g)


Instructions

  1. Preheat the oven to 350°F (180°C) and prepare an 8- or 9-inch baking dish.
  2. In a large bowl, combine strawberries, rhubarb, sugar, cornstarch, and vanilla extract. Mix until evenly coated.
  3. Transfer the fruit mixture into the baking dish and spread evenly.
  4. In another bowl, mix flour, sugar, salt, and cinnamon.
  5. Add melted butter, vanilla extract, almond extract, and chopped almonds. Stir until the mixture forms coarse crumbs.
  6. Evenly sprinkle the topping over the fruit mixture.
  7. Bake for 55–60 minutes, or until the topping is golden brown and the filling is bubbling.
  8. Remove from oven and let cool for at least 20 minutes before serving.
  9. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

  • You can use frozen strawberries and rhubarb; thaw and drain excess liquid before using.
  • Let the crisp rest after baking to allow the filling to thicken properly.
