Description

  • 4 ears fresh corn, kernels removed
  • 2 Roma tomatoes, diced
  • 1 English cucumber, diced
  • 1 avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Bring a large pot of water to a boil and cook the corn for 3 to 5 minutes until tender-crisp.
  2. Remove the corn from the water and allow it to cool slightly before cutting the kernels off the cob.
  3. Dice the tomatoes, cucumber, avocado, and thinly slice the red onion.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper until combined.
  5. In a large mixing bowl, combine the corn, tomatoes, cucumber, onion, basil, and mint.
  6. Pour the vinaigrette over the salad and toss gently until evenly coated.
  7. Fold in the diced avocado carefully to prevent mashing.
  8. Refrigerate the salad for 15 to 20 minutes before serving for the best flavor.
