Description

Summer Fruit Salsa is a light, refreshing dessert or side dish made with fresh strawberries, blueberries, crisp apples, lemon juice, and sugar.   • 1 pint blueberries

  • 6 flour tortillas
  • 1/4 cup butter, melted
  • 1 cup granulated sugar (for cinnamon chips)
  • 1 tablespoon ground cinnamon


Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Wash and finely dice the strawberries and apples.
  3. Combine the diced strawberries, apples, and blueberries in a large mixing bowl.
  4. Add 1/4 cup sugar and the juice from half a lemon. Stir thoroughly until evenly combined.
  5. Cover the bowl and refrigerate for at least 30 minutes or up to overnight for enhanced flavor.
  6. Melt the butter in the microwave or on the stovetop.
  7. Lay the flour tortillas flat and brush both sides with melted butter.
  8. Mix 1 cup sugar and 1 tablespoon cinnamon in a small bowl.
  9. Sprinkle the cinnamon sugar mixture evenly over the tortillas.
  10. Cut tortillas into wedges or use a star-shaped cookie cutter for decorative chips.
  11. Arrange the tortilla pieces on a baking sheet in a single layer.
  12. Bake for approximately 7 minutes, or until golden brown and crispy.
  13. Allow the cinnamon chips to cool completely.
  14. Serve the chilled Summer Fruit Salsa with the cinnamon sugar chips and enjoy.
