Description
This Super Juicy Turkey Baked in Cheesecloth is a foolproof method for making a flavorful, tender, and moist turkey. Infused with a rich herb butter rub and basted with a wine and chicken stock mixture, this turkey is perfect for any special occasion or holiday dinner.

- 1 whole fresh turkey (preferably 12-15 lbs)
- 1/2 cup melted butter
- 2 cups dry white wine
- 2 cups chicken or turkey stock
- 1 cup softened butter (for herb rub)
- 2 tablespoons fresh sage, chopped
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 lemon, zested
- 4 cloves garlic, minced
- 3 teaspoons sea salt
- 1 cup water (for roasting pan)
- Cheesecloth large enough to cover the turkey
- Additional garlic, onions, carrots, lemon, and celery (optional for stuffing)
Instructions
- Preheat the oven to 300°F (150°C). Place 2 cups of water in the bottom of the roasting pan.
- Mix the melted butter, white wine, and chicken stock in a saucepan and set aside.
- In a separate bowl, combine softened butter, sage, rosemary, thyme, lemon zest, garlic, and sea salt until well mixed.
- Pat the turkey dry with paper towels, then rub 2/3 of the herb butter mixture under the skin, covering the breast and drumsticks.
- If desired, stuff the turkey with garlic, onions, carrots, lemon, and celery for added flavor, then tie the legs together and secure the skin flap in back.
- Dip the cheesecloth in the melted butter, white wine, and stock mixture, and drape it over the turkey, tucking in the edges as needed.
- Place the turkey in the oven and baste every 20-30 minutes with the butter/wine mixture, roasting for about 7 to 7.5 hours (or 15-20 minutes per pound).
- About 30-45 minutes before the turkey is done, remove the cheesecloth and continue basting to allow the skin to crisp and brown.
- Once cooked, let the turkey rest for 15 minutes before slicing to allow juices to redistribute.
Notes
- For best results, use fresh turkey that hasn’t been injected with salt solutions.
- Ensure the turkey is fully thawed before preparing if using a frozen turkey.
- Baste the turkey regularly to keep it moist.
- If you prefer a crispier skin, remove the cheesecloth during the final 30 minutes of roasting and baste well.
- Allow the turkey to rest before slicing for juicier meat.
