Description

Sweet Chili Chicken Bites are crispy, tender, and packed with sweet and spicy flavors. A perfect appetizer or main dish, this recipe combines crispy chicken with a delicious homemade sweet chili sauce.


Ingredients

  • 1 lb. chicken breasts, cut into bite-sized pieces
  • 3/4 cup unbleached all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp. baking powder
  • 1/2 tsp. garlic powder
  • Ground Himalayan sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 large free-run eggs
  • 1/4 cup milk
  • Canola oil for frying
  • 3/4 cup sweet chili sauce
  • 1/2 tbsp. sesame seeds, for garnish
  • 1/2 tbsp. chopped green onions, for garnish


Instructions

  1. In a mixing bowl, add flour, cornstarch, baking powder, garlic powder, sea salt, and freshly ground black pepper. Whisk until well combined, then transfer the mixture to a shallow container.
  2. In another shallow container, beat eggs and milk together.
  3. Working in batches, dredge the chicken pieces in the flour mixture, shake off any excess flour, dip in the egg mixture, and toss to coat. Return the chicken to the flour mixture for a second coating.
  4. Heat oil in a skillet over medium-high heat to 375°F (190°C). Carefully add the chicken pieces in batches and fry until golden brown, about 3-4 minutes per batch, flipping them to cook both sides evenly.
  5. Transfer the fried chicken to a paper towel-lined plate to drain excess oil. Repeat with the remaining chicken.
  6. Place the fried chicken in a large bowl, pour sweet chili sauce over, and toss to coat evenly.
  7. Garnish with sesame seeds and chopped green onions. Serve immediately.

Notes

  • Fry the chicken in batches to avoid overcrowding the skillet for even cooking.
  • Ensure the oil is at the correct temperature to get crispy chicken.
  • If making ahead, coat and fry the chicken, then reheat it before tossing with the sauce.
