Description

Sweet Chili Halloumi Wraps are a quick, flavorful, and healthy vegetarian dish that combines crispy halloumi, fresh veggies, and a tangy tzatziki sauce, all wrapped in a soft tortilla. The sweetness of the chili sauce perfectly complements the saltiness of the halloumi, making each bite an irresistible fusion of flavors.

Ingredients

Scale
  • 225 g low-fat halloumi, thinly sliced
  • 1 tbsp sweet chili sauce
  • 1 cucumber, ⅓ grated, ⅔ thinly sliced
  • 200 ml Greek yogurt
  • 2 heads of baby gem lettuce
  • 4 large white wraps
  • 1 carrot, grated or sliced into matchsticks
  • 1 bunch of coriander
  • 1 clove garlic, minced
  • ½ lime, juiced
  • 1 tbsp rapeseed oil
  • Salt & Pepper
  • Red pepper flakes or chili flakes (optional)

Instructions

  1. Slice the halloumi thinly and coat with sweet chili sauce. Marinate for at least 15 minutes.
  2. Heat rapeseed oil in a non-stick frying pan over medium heat. Fry the halloumi until golden brown on both sides, about 2 minutes per side. Add minced garlic halfway through cooking.
  3. Prepare the tzatziki by mixing Greek yogurt, grated cucumber, lime juice, and a pinch of salt.
  4. Warm the wraps in a dry pan or microwave for a few seconds.
  5. Assemble the wraps by spreading a generous amount of tzatziki on the center of each wrap. Add 3 leaves of baby gem lettuce, sliced cucumber, grated carrot, and the cooked halloumi.
  6. Optionally, drizzle more sweet chili sauce and tzatziki on top and garnish with fresh coriander. Fold the sides and roll up the wraps to serve.

Notes

  • To avoid burning the halloumi, use a non-stick frying pan.
  • Thinly slice the halloumi to ensure even cooking and to get crispy pieces in every bite.
  • Add chili flakes for extra heat if you prefer a spicier wrap.
  • The wraps can be prepped in advance. Store the cooked halloumi, tzatziki, and veggies separately for up to 3 days in the fridge.
