  • 1/2 cup milk
  • 2 tsp pumpkin pie spice
  • 1/2 cup brown sugar
  • 1/2 cup brown sugar (for topping)
  • 1/2 cup all-purpose flour
  • 1 cup pecans, chopped
  • 1/4 cup butter, melted (for topping)
  • 5 cups miniature marshmallows


Instructions

  1. Boil the sweet potato chunks in a large saucepan for 20 minutes, or until fork-tender. Drain and mash.
  2. Preheat the oven to 350°F (175°C) and coat a 9×13-inch baking dish with cooking spray.
  3. Add eggs, melted butter, milk, brown sugar, and pumpkin pie spice to the mashed sweet potatoes. Mix until combined, then spread in the prepared dish.
  4. In a medium bowl, combine brown sugar, flour, chopped pecans, and melted butter for the topping. Mix well and spread over the sweet potato layer.
  5. Bake for 25 minutes. Add marshmallows for the last 5 minutes of baking, then continue baking until golden brown and melted.

Notes

  • Feel free to adjust the sweetness by replacing some or all of the brown sugar with maple syrup, honey, or agave nectar.
