Description

Taco Stuffed Baked Potatoes are crispy, fluffy russet potatoes loaded with savory taco-seasoned ground beef, salsa, and your favorite taco toppings. This easy and hearty dinner is a delicious twist on traditional taco night.

  • 6 medium russet potatoes
  • 1/4 cup olive oil
  • 1 tablespoon kosher salt
  • 1 pound lean ground beef
  • 1 ounce taco seasoning (1 packet)
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 3/4 cup water
  • 1/2 cup salsa
  • Shredded cheddar cheese, for topping
  • Sour cream, for topping
  • Guacamole or diced avocado, for topping
  • Diced tomatoes or pico de gallo, for topping
  • Sliced green onions, for topping
  • Fresh cilantro, for topping
  • Sliced jalapenos, optional
  • Crushed tortilla chips, optional


Instructions

  1. Preheat the oven to 400°F.
  2. Wash and scrub the russet potatoes, then dry them thoroughly. Pierce each potato several times with a fork.
  3. Place the potatoes on a baking sheet. Brush them with olive oil and season the skins evenly with kosher salt.
  4. Bake for 45-60 minutes, or until a knife slides easily into the centers. Check smaller potatoes after 45 minutes and continue baking in 10-minute intervals if necessary.
  5. While the potatoes bake, heat a large skillet over medium-high heat. Add the ground beef and cook for 8-10 minutes, breaking it into small crumbles, until no pink remains. Drain excess fat if necessary.
  6. Add the taco seasoning, garlic powder, cumin, and onion powder. Cook for 1 minute, stirring constantly.
  7. Stir in the water and salsa. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until most of the excess liquid has evaporated. Cover and keep warm until the potatoes are ready.
  8. Allow the baked potatoes to cool slightly. Cut a slit along the top of each potato, gently press the sides inward to open it, and fluff the inside with a fork.
  9. Spoon the warm taco meat into each baked potato.
  10. Top with shredded cheese, sour cream, guacamole, tomatoes, green onions, cilantro, jalapenos, crushed tortilla chips, or your favorite taco toppings. Serve immediately.

Notes

  • Choose similarly sized russet potatoes so they finish baking at approximately the same time.
  • Larger potatoes may require an additional 10 minutes of baking, while smaller potatoes may be ready after about 45 minutes.
  • For crispy potato skins, dry the potatoes thoroughly before coating them with olive oil and avoid wrapping them in foil.
  • Ground turkey, ground chicken, shredded chicken, or pork can be substituted for the ground beef.
  • For a meatless variation, replace the beef with seasoned black beans or pinto beans.
  • Prepare the taco meat ahead of time and refrigerate it until ready to reheat and serve.
