Instructions
- Preheat the oven to 350°F (175°C). Grease a mini muffin tin or line it with mini cupcake liners.
- In a medium saucepan, melt 1 cup butter over medium heat. Stir in the water and cocoa powder and bring the mixture to a gentle boil. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the sugar, flour, baking soda, and salt.
- Pour the warm chocolate mixture into the dry ingredients and stir until combined.
- Add the sour cream, eggs, and vanilla extract. Mix until the batter is smooth and fully incorporated.
- Fill each mini muffin cavity about 2/3 full with batter.
- Bake for 10 to 12 minutes or until a toothpick inserted into the center comes out clean.
- While the cake bites bake, prepare the frosting by melting 1/2 cup butter in a saucepan over medium heat.
- Stir in the cocoa powder and milk, then bring to a gentle boil.
- Remove from heat and whisk in the powdered sugar and vanilla extract until smooth.
- Spoon the warm frosting over the freshly baked cake bites and sprinkle with chopped pecans if desired.
- Allow the bites to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
