  • 1/2 cup chopped pecans (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a mini muffin tin or line it with mini cupcake liners.
  2. In a medium saucepan, melt 1 cup butter over medium heat. Stir in the water and cocoa powder and bring the mixture to a gentle boil. Remove from heat and let cool slightly.
  3. In a large mixing bowl, whisk together the sugar, flour, baking soda, and salt.
  4. Pour the warm chocolate mixture into the dry ingredients and stir until combined.
  5. Add the sour cream, eggs, and vanilla extract. Mix until the batter is smooth and fully incorporated.
  6. Fill each mini muffin cavity about 2/3 full with batter.
  7. Bake for 10 to 12 minutes or until a toothpick inserted into the center comes out clean.
  8. While the cake bites bake, prepare the frosting by melting 1/2 cup butter in a saucepan over medium heat.
  9. Stir in the cocoa powder and milk, then bring to a gentle boil.
  10. Remove from heat and whisk in the powdered sugar and vanilla extract until smooth.
  11. Spoon the warm frosting over the freshly baked cake bites and sprinkle with chopped pecans if desired.
  12. Allow the bites to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Do not overbake the cake bites to keep them moist and soft.
  • Pour the frosting over the bites while both are still warm for the best texture.
