Description

An easy tomato and zucchini ratatouille made with fresh zucchini, ripe tomatoes, garlic, olive oil, and parsley. This simple oven-baked vegetable dish is naturally vegan, gluten-free, dairy-free, and perfect as a light main dish or Mediterranean-style side.


Ingredients

  • 1 medium zucchini, cut into 1 cm slices
  • 2 medium tomatoes, halved and cut into 1 cm slices
  • 1 garlic clove, finely chopped
  • 50 g olive oil
  • 1/4 bunch fresh parsley, finely chopped
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 180°C (350°F) using the fan setting.
  2. Cut the zucchini into approximately 1 cm thick slices and place them in a mixing bowl.
  3. Cut the tomatoes in half, then slice them into approximately 1 cm thick pieces. Add them to the bowl with the zucchini.
  4. Add the finely chopped garlic, salt, black pepper, and olive oil. Gently mix until the vegetables are evenly coated.
  5. Arrange the tomato and zucchini slices alternately in a 20 cm round baking pan.
  6. Pour any remaining seasoned olive oil from the mixing bowl over the vegetables.
  7. Bake for about 30 minutes, or until the zucchini is tender when pierced with a fork.
  8. Remove from the oven, sprinkle with finely chopped parsley, and serve warm or at room temperature.

Notes

  • Cut the tomato and zucchini slices to an even thickness so they cook at the same rate.
  • Use ripe but firm tomatoes to prevent the ratatouille from becoming excessively watery.
  • Do not discard the seasoned olive oil left in the mixing bowl; pour it over the vegetables before baking for extra flavor.
  • Fresh basil, oregano, or thyme can be used as additional herbs.
  • Serve with crusty bread, rice, quinoa, pasta, grilled vegetables, fish, chicken, lentils, or chickpeas.
  • Store leftovers in an airtight container in the refrigerator and reheat gently before serving.
