  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup bell pepper, chopped
  • 1 cup mozzarella pearls
  • 3/4 cup salami or pepperoni, cubed
  • 1/2 cup Kalamata olives, sliced
  • 1 cup artichoke hearts, chopped
  • 1/4 cup fresh parsley or basil, chopped
  • 1/2 cup Italian vinaigrette dressing
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Bring a large pot of salted water to a boil and cook the tortellini according to package instructions until al dente.
  2. Drain the tortellini and rinse under cold water to stop the cooking process and prevent sticking.
  3. Transfer the cooled tortellini to a large mixing bowl.
  4. Add cherry tomatoes, cucumber, red onion, bell pepper, olives, artichoke hearts, mozzarella, and salami to the bowl.
  5. In a separate bowl, whisk together Italian vinaigrette, minced garlic, and Parmesan cheese.
  6. Pour the dressing over the salad and gently toss until evenly coated.
  7. Season with salt and black pepper to taste and mix again.
  8. Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  9. Toss again before serving and garnish with fresh herbs and extra Parmesan if desired.
