- 3/4 cup salami or pepperoni, cubed
- 1/2 cup Kalamata olives, sliced
- 1 cup artichoke hearts, chopped
- 1/4 cup fresh parsley or basil, chopped
- 1/2 cup Italian vinaigrette dressing
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Bring a large pot of salted water to a boil and cook the tortellini according to package instructions until al dente.
- Drain the tortellini and rinse under cold water to stop the cooking process and prevent sticking.
- Transfer the cooled tortellini to a large mixing bowl.
- Add cherry tomatoes, cucumber, red onion, bell pepper, olives, artichoke hearts, mozzarella, and salami to the bowl.
